A vegan pasta recipe made with coconut milk. Delicious creamy pasta recipe you can easily make even in one pot. This is similar to Alfredo sauce(white sauce) but lighter in texture compared.

INGREDIENTS:
-225g Pasta (using Rotini pasta, but you can use any kind)
-150g Broccoli, separate in to bite sizes
-200g Mushroom (using button mushroom, baby Bella. Also you can use any kind)
-1 medium size Jalapeño pepper
-1/2 medium size Onion chopped
-2 cloves Garlic sliced
-1 tsp Chili Flakes
-Salt per taste
-2-3 tbsps of Olive oil (you can substitute coconut oil for this)
-3/4 cup thick coconut milk (see below)
-2 cups of Pasta water
-2 tsp Corn starch mixed in 2 tbsps of water
**Coconut milk I am using is to thicker side, so I am adding 2 cups of pasta water to reduce the thickness. You can adjust this as you prefer. If you want the sauce more creamier use one and half cup of thick coconut milk with one cup of pasta water.
**If you are using milk from a fresh coconut, use the first squeeze and increase the coconut milk amount.As it is little lighter than what I am using, you might not even need to add pasta water when you use this.
