Easy Birthday Cake Recipe
4 tablespoons flour, 100 g
1.5 cups granulated sugar, 350 gr
700 ml milk, 2+4/5 cups
3 egg yolks
10 g vanilla powder, use 1 teaspoon vanilla extract instead of powder
1 pinch of salt
2 tablespoons butter
1 heaped tablespoon cocoa powder
24 pieces lady fingers
500 g strawberries, helved into four
1 vanilla sponge cake, 21 cm or 8 in
To decorate
100 g strawberries, halved
β’ To make the custard add the flour, granulated sugar, and salt to a saucepan on medium heat.
β’ While whisking add the milk until you have a thick, smooth mixture.
β’ Meanwhile, to temper the egg yolks, take some spoons from the hot mixture and add it to the beaten egg yolks.
β’ When the eggs have been tempered, add back into in the saucepan.
β’ After adding the eggs, lower the heat and cook for a further 1-2 minutes after you see the first bubbles on the surface and let the custard come to a boil.
β’ Then add the butter and vanillin and turn off the heat. Whisk until cool down.
β’ Separate two out of three of the custard in a bowl and add cocoa and continue whisking while cooling. You can also keep it in the fridge for a while if you have time.
β’ Place one layer of the cake onto a serving platter or cake stand. Spread the cocoa custard and strawberries on the cake.
β’ Spread plain cream on the top layer and close it with the cream on the bottom.
β’ Place the lady fingers vertically standing them up with the pretty sugar-coated side facing out and around the cakes and tie them with a thick ribbon.
β’ Spread the remaining custard evenly on the top layer of the cake. Decorate with strawberries and refrigerate your cake to rest for half an hour if you have time.
β’ Your easy and delicious strawberry cake is ready to eat.
