Carrot – 2 Nos
Cucumber
Pomegranate – 1 Cup

To Make Raita
Fresh Curd – 200gms

Sugar – 1 Tsp (Buy: )
Sliced Green Chilli
Pomegranate – 1/2 Cup
Coriander Leaves
Mint Leaves
Kashmiri Red Chilli Powder – 1/4 Tsp (Buy: )
Cumin Powder – 1/4 Tsp (Buy: )
Chaat Masala – 1/4 Tsp (Optional) (Buy: )
Method:
Pomegranate Salad:
1. To make the salad dressing, to a bowl, squeeze juice of lemon.
2. To this add extra virgin olive oil, honey, salt and pepper.
3. Mix well and keep it aside.
4. To make the salad, clean, peel and grate the carrot, peel, deseed and chop the cucumber.
5. To a wide bowl, add the pomegranate seeds, grated carrot, chopped cucumber, sprouted green gram.
6. To this add the salad dressing and toss well.
7. Rest the salad for 5 mins before serving.
8. To make the raita, to a bowl add the curd, salt , sugar and whisk well.
9. To this add green chilli, pomegranate, coriander leaves, mint leaves, kashmiri red chilli powder, cumin powder, chaat masala powder and mix well.
10. Make sure the curd is chilled.
11. Refreshing pomegranate salad is ready to be served.
