Spicy Tuna Taco Salad with Peach Salsa – Perfect Lunch
How to make –
INGREDIENTS –
1 small peach, pitted and finely chopped
1/2 jalapeño pepper, deseeded and chopped
1 spring onion, finely chopped
2 tbsp fresh coriander, chopped
1/2 lime, just juice
1/2 head of Little Gem lettuce, shredded
1/2 avocado, diced
1/2 red pepper, deseeded and chopped
8 cherry tomatoes, halved
1 x 80g pot of John West Infusions Tuna Jalapeño
PREPARATION METHOD –
In a bowl, combine the peach, jalapeño, spring onion, coriander and lime juice. Toss to combine.In a bowl, toss together the lettuce, avocado, red pepper and cherry tomatoes.Layer the peach salsa over the salad. Top with the John West Infusions Tuna Jalapeño. Pack into a lunchbox or enjoy immediately.
