Healthy, Quick & Easy LEEK SOUP

Ingredients
A handful of vermicelli
1 tbsp of vegetable oil
1 lt of water
1 diced tomato
3 leeks
1 onion
1 carrot
1 tbsp of all purpose flour
Salt, pepper, red pepper flakes
Dressing:
1 egg yolk
3 tbsp of yogurt
Preparation
1- Combine 1 lt of water with 1 finely cut onion in a pot.
2- Boil for about 15 minutes until the water has a yellowish color.
3- Add in 3 finely chopped leeks.
4- In a skillet, combine about 1 tbsp of vegetable oil with 1 grated carrot and saute until the oil turned orange in color.
5- Add in 1 tbsp of all purpose flour and continue to saute.
6- Add the carrot mixture into the pot.
7- Later on, add in 1 diced tomato and salt.
8- Cook for about 45 minutes.
9- After 45 minutes of cooking, add in a handful of vermicelli and cook for 10 more minutes.
10- For the dressing; whisk 3 tbsp of yogurt with 1 egg yolk, then add water from the pot to warm the mixture and finally mix the dressing with the soup.
11- Cook for 2 more minutes by stirring on low heat.
12- Leek soup is ready to serve.
