Simple Veggie-Loaded BREAKFAST PIE

Ingredients

3 eggs
1 tsp salt
½ tsp of pepper
2 tbsp of olive oil
3 tbsp of all purpose flour
1 tsp of baking powder
3 potatoes
1 zucchini
1 onion
1 red bell pepper
1 carrot
Fresh dill
Mozzarella cheese

Preparation

1- In a large bowl, gather and whisk 3 eggs, 1 tsp of salt, ½ tsp of pepper, 2 tbsp of olive oil, 3 tbsp of flour and 1 tsp of baking powder.
2- Mix in 3 grated potatoes, 1 grated zucchini, 1 finely chopped spring onion, 1 finely cut red bell pepper, 1 grated carrot and some chopped fresh dill. Don’t forget to squeeze the water out of the grated vegetables.
3- Line the bottom and sides of an ovenware with parchment paper.
4- Pour the veggie mixture on the parchment paper and flatten the top.
5- Bake for 50 minutes in an oven preheated at 175 °C until the veggies are cooked.
6- Sprinkle the cooked veggies with grated mozzarella.
7- Continue baking until the mozzarella melts and browns.
8- Once cooled down slightly, cut into serving size pieces.
9- Enjoy!
