Baking brownies in convection oven is a great way to do it. A regular oven does a good job as well, but you can do it at a lower temperature and without upping the baking time. This way your brownies come out just as if they were baked using a regular oven!
If you decide to use a convection oven for this recipe, keep in mind that the baking time will be shorter with about 20 %. So check on them after 15 minutes of baking and then every 5 minutes until done. If you have an old-fashioned Â stand mixer , now is the best time to use it . With wire whips attached, beat eggs and sugar together on high speed for five minutes or morestirring constantly until the mixture turns whitish and creamy. This process increases volume, thickens the batter, and makes it more even in texture. If you don’t have a stand mixer , no problem! It works just as well if you use a regular hand mixer . The only difference is that you’ll need to do this for about 10 minutes or so which might require some muscle power.
When choosing baking pans, always opt for either glass or metal bakeware . Never use any type of ceramic pan for cooking brownies because they can cause them to burn along the sides before they are set in the middle. As always, it’s best to line your baking tins with aluminum foil or parchment paper Â to prevent sticking and burning along the bottom.
To make the brownies, sift all dry ingredients together in a large bowl. Sifting combined with baking powder and soda allows for more aeration which will result in lighter baked goods.
