4-ingredient RecipešŸ‘‡Mango Tapioca Pudding
Itā€™s smooth, creamy, easy to make and healthier than regular chocolate mousse. Itā€™s the perfect dessert to whip up when youā€™ve got leftover sweet potato hanging around.

šŸ¤ Vegan, refined sugar-free, gluten-free, oil-free and nut-free.

Recipe (Serves 4-5):
– 2 Cups Sweet Potato (Baked, Peeled and Mashed)
– 1 Cup Medjool Dates (Soaked in hot water for 10 minutes and drained)
– 3/4 Cup Full Fat Coconut Milk
– 1/2 Cup Cacao Powder
– 2-3 Tbsp Rice Malt Syrup (or choice of liquid sweetener)
– 2 Tsp Vanilla Extract

Toppings (Optional):
– Coconut Yoghurt
– Shaved Dark Chocolate

1. Place all ingredients into a food processor and process until smooth. Taste and adjust sweetness with liquid sweetener.
2. Transfer to a jar and top with coconut yogurt and shaved dark chocolate. Enjoy! Store in the fridge for 4-5 days.
