Alcapone White Chocolate Loaf Cake | Steamed And Baked-2 Ways of Preparing
Here’s my take of Alcapone White Chocolate Loaf Cake, inspired by J.Co’s Alcapone Donuts and trending Alcapone Loaf in the Philippines. So soft and fluffy, may it be baked or steamed. Super easy to make at home.
Here’s what you’ll need:
4 egg yolks
1/3 cup granulated white sugar
1/4 cup oil
1 tsp vanilla
1/3 cup water
1 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
4 egg whites
1/2 tsp vinegar
1/3 cup granulated white sugar
For the frosting:
100 grams Swiss White Chocolate
1 cup heavy cream or all purpose cream (heated for about 70C)
Topping:
Sliced and Toasted Almonds
Notes:
1. Baking time may depend on oven specification. Check your cake after 25 minutes using toothpick.
2. Steaming method is way faster than baking. It took me 15 minutes to fully baked the cake loaf. But in this case it may vary again on oven specs.
3. I popped the white chocolate frosting in the freezer and whipped it up to give a fluff. This is optional. You can use it right away if desired.
