Asiago Bagels
Homemade Asiago Bagels at Deep South Texas. I love Asiago Bagels and was determined to make them, but first I had to make the Asiago cheese. I was finally able to accomplish that and here is the long awaited video. Give this recipe a try, you will love them as well. You do not need to make your own cheese to give it a try. Below is a list of the ingredients.
Poolish or Sponge
1 cup Bread Flour
1 cup Water
1/2 tsp yeast
let set at room temperature over night
Asiago Bagels
Poolish made last night
1/2 cup plus 2 Tablespoons Water
3 cups Bread Flour
1 Tablespoon Brown Sugar
1 1/2 tsp yeast
1 1/2 tsp salt
1 cup shredded Asiago Cheese
Boil in 3 quarts water with 1/4 cup honey.
1 minute on each side
Add additional shredded Asiago Cheese to the top of the Bagels.
Bake at 425 F for 20 minutes.
