This Barley / Jau Salad is a very healthy and super tasty salad that is loaded with nutrients.
It is a perfect dinner recipe for weight loss.
Ingredients:
Pearl barley (Jau) – 1/4 Cup
Salt – to taste
Olive Oil/Butter – 1 Tsp
Tofu/ Paneer – 1/2 Cup (50 Gms)
Fresh Coriander Leaves(finely chopped) – a handful
Fresh Mint leaves(pudina) – 2 Tsp
Red Chili Flakes – 1/2 Tsp
Red Chili Powder – 1/2 Tsp
Olive oil/ Butter – 1 Tsp
Garlic (finely chopped) – 2 cloves
Onion – 1 Small
Red, Green, Yellow Capsicum – 1/4 Cup
Carrot – 1 small
Mushroom – 2-3
Broccoli (steamed) – 1/2 Cup
Black Pepper powder – 1/2 Tsp
Mixed / Pizza Seasoning – 1 Tsp
For Dressing:
Extra Virgin Olive oil – 1 Tsp
Lemon Juice – 2 Tsp
Balsamic vinegar/ white Vinegar – 1 Tsp
Honey – 1 Tsp
Salad assembling:
Onion/ Spring Onion (chopped) – 1/4 Cup
Tomatoes/ Cherry Tomatoes – 1/2 Cup
Lettuce Leaves (roughly Chopped) – 1 Cup
Pomegranate(anaar) – 1/4 Cup
Pine Nuts, Sunflower & Pumpkin Seeds – 1- 2 Tbs(optional)
