Chocolate Ganache:
2 cups chocolate chips (350g)
1 cup hot heavy cream (250ml)
Chocolate Chiffon:
4 egg yolks
1/4 cup sugar (50g)
1/4 cup hot oil (60ml)
1/3 cup cocoa powder (30g)
1 tsp of vanilla extract
1/4 cup milk (60ml)
3/4 cup cake flour (95g)
1 tsp baking powder (5g)
1/2 tsp salt (3g)
4 egg whites
1/2 tsp cream of tartar or lemon or white vinegar
1/3 cup sugar (70g)
