You’ll need
125 g softened butter
1 cup icing sugar
½ cup starch
2 tsp extra fine ground coffee
3 tsp cocoa powder
1 tsp baking powder
1 tsp vanilla sugar
About 1 ½ cups all-purpose flour
1 egg
Here’s how
1- In a whisking bowl, put together 125 g of softened butter, 1 egg, 1 cup of icing sugar, ½ cup of starch, 2 tsp of extra-fine ground coffee, 3 tsp of cocoa powder, 1 tsp of baking powder, 1 tsp of vanilla sugar and knead.
2- Add 1,5 cups of all purpose flour gradually and form a soft to touch dough.
3- Take small pieces from the dough and shape each one to an oval shape.
4- Place the ovals on a parchment lined oven tray and then press the middle line with a toothpick.
5- Bake for 15 min in an oven preheated at 180 °C.
6- Coffee bean cookies are ready to serve.
