Dutch Oven Beef Stew Hurricane Hanna inspired
Dutch Oven Beef Stew inspired by a power outage from Hurricane Hanna. Deep South Texas experienced Hurricane Hanna a few weeks ago. During the power outage my wife made a family favorite, beef stew in the Dutch Oven over charcoal. I am recreating that wonderful meal here. Step by step directions on how to make it. Recipe ingredients are below. I have also thrown in a few clips of the Hurricane Hanna aftermath at my home and garden in Deep South Texas.
Recipe Ingredients
2 1/2 lbs chuck Roast cut into 1 inch chunks
2 Tbsp Crisco
1 large onion quartered and sliced thick, about 1 lb
4 large potatoes cut into 1 inch cubes, about 2 lbs or 5 cups
3/4 lbs carrots sliced 1/4 inch thick, about 2 cups
1/2 cup frozen peas
1 qt beef broth, reserve 1/2 cup
1 tsp salt, divided in half
1 tsp black pepper, divided in half
1 tsp dried thyme
3 bay leaves
3 Tbsp corn starch
