Egg plant pickle/Wam Batu moju: බටු මෝජු සදා ගන්නා ක්රමය
This is a Sri Lankan eggplant/brinjal recipe..

Ingredients:
4 eggplants/brinjal
1 large onion
5-6 green chili peppers, sliced in the middle
1/2 tsp of turmeric
2 tbsp of grounded mustard seeds
4 tbsp of vinegar
2 tbsp of sugar
Salt to taste
5-6 chopped or thinly sliced garlic
1 inch of ginger chopped or thinly sliced
1 tbsp of chili powder(roasted powder is better)
To make the the paste:
Combine garlic, ginger, sugar, grounded mustard and vinegar & mix well. Chop the mixer well or grind it in a machine to make a paste
Vegetables:
Deep fry the sliced brinjal/eggplant till golden brown, when putting the eggplants to oil make sure you squeeze them with out crushing to take off the access water
Fry the Onions & Chili peppers for about 30-40 seconds..fry it lightly..
Combine the vegetables & the paste at the end, add more salt as preferred..
Sugar & Vinegar works as preservative ingredients, so you can keep batu moju for a while & enjoy..This will taste real good after one to two days…
