Fuel for Training – Rice Cake Recipe (Savoury)
RICE CAKE RECIPE – (makes around 16 servings)
INGREDIENTS
– 8 fresh eggs
– 0.5 kg sushi rice or Risotto rice, 1-1.2 L of water
– 50g of bacon, ham, or prosciutto
– 1/2 cup of soy sauce and 1/4 cup of balsamic vinegar – Brown Sugar and Parmesan cheese

METHOD
Scramble and cook eggs and ham/bacon in frypan, breaking them up thoroughly into small pieces. Set aside.

Steam or cook rice according to directions prececribed. Use sticky rice like Sushi.

Mix the eggs and ham/bacon into the rice and add Parmesan, Soy and Vinegar to taste.

Transfer to a shallow baking pan and firmly compact mixture, sprinkle brown sugar over the top, then cool in the fridge.

Cut into brownie sized pieces and wrap with foil. These should be stored in refrigerator for no more than 3 days.
