2 cans (580g) Chickpeas, drained
1 large Cucumber, diced
8 Cherry tomatoes, cut into quarters
1/2 Red onion, sliced
1/4 Bell pepper, diced
3/4 cup (90g) Feta cheese, crumbled
2 tablespoons Coriander, chopped
For the dressing:
1/4 cup (60ml) Lemon juice
1/4 cup (60ml) Extra virgin olive oil
1 teaspoon Dijon mustard
Salt to taste
Pepper to taste
1/4 teaspoon Cumin
