Serves – 2
Ingredients –

1 Tbsp (20ml) – Peanut Oil, Divided
500g (1.1lbs) – Rump, Scotch or Eye Fillet, Thinly Sliced
1 – Brown (Yellow) Onion, Thinly Sliced
3 – Garlic Cloves, Minced
10g (0.3oz) – Ginger, Peeled & Minced
1 – Small or Half Large Red Bell Pepper (Capsicum), Thinly Sliced
150g (5.2oz) – Button Mushrooms, Thinly Sliced or Quartered
2 – Spring Onions (Scallions), Green Stem & White Root Separated & Thinly Sliced
1 – Long Red Chilli, Thinly Sliced (Optional)
2 1/2 Tbsp (50ml) – Dark Soy Sauce
2 1/2 Tbsp (50g) – Hoisin Sauce
Coriander (Cilantro) – Garnish
Chilli Oil – Garnish –

Notes –

You can substitute beef for chicken breast. If using chicken, slice the chicken into thin strips and fry for 2 1/2 minutes then remove and continue the recipe as followed.

This recipe can be stored in the fridge for up to 4 days and in the freezer for up to 4 months.

To reheat, place it into a microwave-safe bowl and heat in bursts, mixing in-between.
