Homemade Halloumi Cheese – Deep South Texas
Today I am making homemade Halloumi cheese at Deep South Texas. This cheese is popular in Cyprus, where it is made with sheep or goat milk. I am making it with cows milk. It also has dried mint added at the end of the process. This cheese is unique because it dose not melt, and can be grilled or fried. Oddly enough, it also goes well with watermelon. Recipe ingredients below.
2 gal whole milk, low temperature pasteurized, and non-homogenized
1/2 tsp calcium chloride diluted in 1/4 cup water
1/2 tsp rennet diluted in 1/4 cup water
2 oz cheese salt
1 tablespoon dried crushed mint leaves
