Hot Cross Buns
Ingredients
For the Dough
▢3 2/3 cups all-purpose flour 440g plus more for dusting
▢1/4 cup granulated sugar 50g
▢1/4 cup light brown sugar 50g
▢1 tsp salt
▢2 1/4 tsp instant yeast 1 package
▢1 tsp cinnamon
▢1/2 tsp allspice
▢1/4 tsp nutmeg freshly grated if possible
▢1/4 tsp cardamom
▢1 tbsp orange zest optional
▢1 egg large, room temp, lightly beaten
▢1/2 cup milk 120mL
▢1 tbsp vanilla extract 15mL
▢1/2 cup sour cream 120g
▢6 tbsp unsalted butter 85g
▢2/3 cup raisins or mixed dried fruit
For the Egg Wash:
▢1 egg
▢1 tbsp cream
For the Cross:
▢1/3 cup all-purpose flour 40g
▢1/4 cup water 60mL
For the Glaze:
▢3 tbsp vanilla extract 45mL
▢1 tbsp apricot jam 15mL
▢1 tbsp water 15mL
