  2. one thing you did not mention is that induction will only work with pots and pans that have ferrous metals (no copper or aluminium), this might be a deal breaker if you have and love a large (and potentially very expensive to replace) set of copper cookware.
    There might be an alternative with all metal induction cooktops from Panasonic in the future, also de buyer has a new set of copper pots and pans that has an induction compatible coating.

  3. Due to design, I presume induction is not suitable for stir frying with a wok?

  4. I like the idea of a quick seat on the induction. I like sous vide steak and that would sear quickly without changing the internal temp too much!
