Kani Salad Recipe (Japanese Crab Stick Salad)
With a medley of crunchy vegetables and savory crab sticks, Kani Salad is a delicious Japanese seafood salad loaded with contrasting textures, tastes, and colors. Although it’s known as Kani Salad in the West, the imitation crab used to make the dish is called kanikama in Japanese, so in Japan, the dish is known as Kanikama Sarada (カニカマ サラダ). It’s also more a home-cooked dish in Japan, so it’s not something you’ll find on the menu at sushi restaurants. The good news is that it’s super easy to make, and I’m going to show you how to make this authentic crab stick salad at home.

INGREDIENTS FOR KANI SALAD
100 grams cucumbers (1 small cucumber, thinly sliced)
80 grams carrots (julienned)
1/4 teaspoons salt
20 grams glass noodles
140 grams crab sticks
2 teaspoons black sesame seeds
10 grams scallions (1 scallion, chopped)
1/4 cup Japanese mayonnaise
2 teaspoons lemon juice
lemon zest
