Hey Foodies, today I’m sharing my Khow Suey Recipe, which is a Burmese Noodle Soup made mainly with a curry paste & coconut milk. The ahmazing factor about this is the contrast of flavors with all the toppings that are added on top of the rich & fresh soup 🙂

Ingredients for Khao Swe:
For Khao Suey Paste –
Coriander seeds – 1 tsp
Peppercorns – 1/2 tsp
Black cardamom – 1
Kashmiri Red Chili – 4-5
Shallots – 10-12 (or 1 med. sized onion)
Ginger – 1 inch
Garlic – 4 cloves
Coriander stems – handful
Zest from lemon – 1/2
Lemon grass – 3-4 inch chopped
Turmeric – 1/2 tsp
For Soup
Oil – 1 tbsp
Khao Suey paste – 1/2 the quantity
Veggies – Carrots, Beans, Red Capsicum and Zucchini
Salt – to taste
Water – 1 cup + 1 cup
Coconut milk – 1 cup
Soy sauce – 1 tsp
Mushrooms and Broccoli
Jaggery – 1 tsp
Boiled Noodles – 200gm
To serve –
Boiled Noodles
Soup
Lemon wedges
Fried noodles
Fried garlic
Spring onions
Red Chili flakes
Chopped onion
Coriander leaves
Birista (optional)
Peanuts (optional)
