You’ll need
For the filling;
800 ml milk
¾ cup granulated sugar
5 tbsp all purpose flour
2 tbsp starch
1 egg
75 g chantilly powder
For the dough;
125 g butter
300 ml water
1 cup all purpose flour
2 tsp vanilla powder
4 eggs
For the top;
Chocolate
Here’s how
1- For the filling, mix together 800 ml of milk with ¾ cup of granulated sugar, 5 tbsp of all purpose flour, 2 tbsp of starch and 1 egg.
2- Cook by whisking until thickens.
3- Remove from the heat when it thickens, transfer into a large bowl, cover with cling film and let it cool.
4- To make the batter, heat 125 g of butter and 300 ml of water in a pot.
5- When the butter is melted, add 1 cup of all purpose flour and 2 tsp of vanilla powder. Cook 2-3 minutes, mixing continuously.
6- Remove from the heat and let it cool for 10 minutes.
7- Add 4 eggs, one at a time, beating well to incorporate completely after each addition.
8- Transfer the batter into a ziplock bag and close it, or put into a pastry bag if you have one.
9- Line an oven tray with parchment paper. After cutting the edge of the bag, squeeze the batter onto parchment paper in strips.
10- You can wet your fingers lightly and give the strips a better shape.
11- Bake in an oven preheated at 180 degrees for 35 minutes, without opening the oven door.
12- Let the pastry puffs cool completely after baking.
13- Meanwhile, add 75 g of chantilly powder into the cooled cream and beat using a mixer.
14- Cut the pastry puffs in half and gently pipe the filling into them and replace their tops. Or you can pipe the filling into one end of the pastry puff without cutting. Repeat doing this for each puff until they are all filled.
15- Finally, dip the top half of filled eclairs into the melted chocolate and place on a serving plate.
16- Refrigerate until serving! Decorate the eclairs in any way you’d like! Enjoy!
