Mango Cream Cake
I love it when it’s mango season. There’s a wide variety of recipe you can create with mangoes. Today, we are going to make a refreshing Mango Cream Cake.
Here’s what you’ll need:
CAKE:
4 egg yollks
1/3 cup sugar (67g)
1/4 cup sunflower oil ( 60ml) or any cooking oil
1/3 cup mango juice (83ml)
1 tsp vanilla (5ml)
1 cup all purpose flour (125g)
1½ tsp baking powder (8g)
1/2 tsp salt (3g)
4 egg whites
1 tsp lemon juice or vinegar or cream of tartar
1/3 cup sugar (67g)
MANGO GLAZE:
2 large mangoes (pureed in a blender or food processor)
4 tbsp sugar
3 tbsp orange or lemon juice
WHIPPED CREAM:
1½ cup whipping cream
2 tablespoon powdered sugar
