How to make a Mango Graham Ice Box Cake
Here’s what you’ll need:
CRUST:
1 cup crushed graham crackers
¼ cup melted butter (50g)
FILLING:
200grams Cream cheese (softened)
1/2 cup powdered sugar (60g)
1 cup whipping cream (250ml)
1 tablespoon unflavored gelatin or agar agar (10g)
2-3 tablespoons of cold milk
2 tablespoons of fresh lemon juice
1/2 teaspoon vanilla extract
1 large mango (scooped into mango balls)
Topping: 1/2 cup crushed graham crackers
Chill in the fridge overnight for best result.
