Massaged Kale Salad Recipe
What you’ll need:
2 bunches of kale, large stems removed, and leaves chopped (or torn) into small pieces.
The juice of 1 lemon
3 garlic cloves (minced or pureed)
1 TBSP Bragg’s Liquid Aminos
1/3 cup olive oil
1/2 cup of grated parmesan cheese or nutritional yeast
salt & pepper
Directions:
De-stem and chopped kale into small, bite sized pieces. Put kale into a large mixing bowl and set aside.
Combine all remaining ingredients in a small bowl.
Pour your dressing over your kale and massage. Squeeze and roll the kale with your hands. Continue this process for 1-2 minutes, until your kale has reduced in size by about half.
You’ll notice that the kale is darker, shinier, and softer. The process of massaging the kale breaks down it’s outer cell structure making it softer and less bitter.
Refrigerate the salad for 15-20 minutes & serve.
