Mediterranean Chickpea Salad Recipe
Prep Time: 15 minutes Total Time: 15 minutes
INGREDIENTS:
2 x 240g cans chickpeas – drained, rinsed
300g cherry tomatoes – halved
2 medium cucumber – diced
1 small red onion – halved, thinly sliced
½ cup crumbled feta cheese
2 tbsp fresh parsley – chopped
¼ kalamata olives – halved
3 tbsp olive oil
2 tbsp white vinegar
1 tbsp lemon juice
½ tsp chilli flakes, salt and pepper – EACH
DIRECTIONS:
1- In a large bowl add all the prepped vegetables and feta cheese.
2- In a small bowl, combine olive oil, white vinegar, lemon juice, chilli flakes, salt and pepper together.
3- Pour the sauce over the salad and toss gently to combine.
4- Enjoy!
