Mexican Street Corn Salad Recipe:
Ingredients:
2 Tbsp Primal Kitchen Avocado Oil
2 cups corn kernels
2oz cojita cheese
1/4 cup creen onion, chopped
1/2 cup cilantro, chopped
1 jalapeño, diced
Juice of 1 lime
Chile flakes to taste
2 Tbsp Primal Kitchen Mayo
Directions:
Drizzle Avocado Oil in a cast iron pan on medium-high heat
Add corn and stir frequently until corn starts to blacken
Put corn in bowl and add remaining ingredients
Combine throughly until corn is evenly coated and enjoy grilled corn salad
