Paneer Tikka Salad Recipe:
Marination:
Paneer (diced) – 250 grams
Mustard Oil – 1 tbsp
Kashmiri Chilli Powder – 1 tsp
Curd – ¼ Cup
Ginger Garlic Paste – 2 tsp
Lemon Juice – 1 tbsp
Salt – ½ tsp
Turmeric Powder – ¼ tsp
Garam Masala Powder – ½ tsp
Cumin Powder – ½ tsp
Chaat Masala – 1 tsp
Besan – 1 tbsp
Dressing:
Mint Leaves – ¼ Cup
Coriander Leaves – ½ Cup
Garlic – 2 Cloves
Green Chilli (roughly cut) – 1 no
Lemon Juice – 2 tbsp
Ice Cubes – ½ Cup
Mayonnaise – ¼ Cup
Honey – 1 tbsp
Chaat Masala – ½ tsp
Roasted Cumin Powder – ¼ tsp
Lemon Zest – 1 no
Salt – ¼ tsp
Other Ingredients:
Romaine Lettuce – 1 no
Cherry Tomato (halved) – ¼ Cup
Yellow Capsicum (diced) – ¼ Cup
Onion (sliced) – ¼ Cup
Cucumber (sliced) – ½ Cup
Instructions:
1. Make the marination by whisking together the oil and red chili powder first. Add all the remaining ingredients and whisk again to form smooth marination.
2. Add the Paneer, mix, and marinate for 15 minutes. You can prepare the dressing and other ingredients in the meantime.
3. Arrange the paneer cubes onto skewers. Cook them over direct heat until they turn charred on all sides.
4. For the dressing, blend together mint leaves, coriander leaves, green chili, lemon juice, and ice cubes.
5. Whisk them along with mayonnaise, honey, chaat masala, roasted cumin powder, and lemon zest. Set the dressing aside. It can also be stored in the refrigerator.
6. To assemble the salad, add all the veggies in a large bowl. Top with the Paneer. Drizzle the dressing over the salad. Mix it and serve immediately.
Cooking Tips:
1. Optionally, you can add roasted cashews for an extra crunch.
2. For a low-fat dressing, you can replace the mayonnaise with curd and 1 tbsp of olive oil.
3. If the salad is to be eaten later, then store the dressing separately. Mix in the dressing just before serving/consuming.
4. You can also marinate large paneer pieces in the batter and then grill/pan-fry them. Then slice them into smaller pieces.
5. You can use any lettuce of your choice.
