Prawn Coconut Soup

INGREDIENTS :
• Butter
• Cleaned prawn
• Salt
• Black pepper powder
• Ginger and garlic
• Shallots
• Red chilli
• Shallots
• Garlic cloves
• Coriander powder
• Cumin powder
• Pepper powder
• Salt
• Chicken / vegetable stock
• Sugar
• Coconut milk
• Spring onions
• Lemon juice
Let’s get started,
• In a pan, add 2tbsp of butter, 200 grams of cleaned prawn, salt and black pepper powder.
• Sauté for 2 minutes and set aside.
• In the same pan, use the same left-over butter and add 1 tbsp each of chopped ginger and garlic.
• Add one cup of finely chopped shallots and sauté for 5 minutes.
• To make the red curry paste:
– 5 dried red chilli
-¼ cup shallots
– 5 garlic cloves
– 1tsp ginger
– 1tsp coriander powder
– ½ tsp cumin powder
– ½ tsp pepper powder
– ½ tsp salt
• Mix all the above ingredients and add 2 cups of chicken / vegetable stock.
• Add 1tbsp of sugar and let it boil.
• To this, add 1 cup of thick coconut milk and cook in medium flame for 5 minutes.
• Now, add the cooked prawns into the pot and cook for 3-4 minutes.
• Add, 1tbsp lemon juice and mix well.
• Top it with 3 tbsp chopped spring onion greens.
• Mix well and serve hot.
