Rainbow Salad
Ingredients For Dressing:
½ Tbsp Honey
1 Tbsp Extra virgin olive oil
1 tsp Dried rosemary
1 tsp Dried Basil
3 tbsp Orange juice
1 tsp Salt
Ingredients For Salad
100 gms lettuce leaves
200 g tomatoes – chopped
200g yellow bell peppers
200g green Zuccini
200g Cucumber
200g Capsicum green
200g Guava pink variety
200g Grapefruit
1 Small Orange for dressing
Method: To make the dressing:
In a small glass bowl add the extra virgin olive oil + Honey+ Dried rosemary+ Dried Basil and squeeze in the Orange juice , whisk all the ingredients well and let the dressing rest .
To make the salad: Immerse the lettuce leaves in cold water so they get crisp and open up. In a bowl add yellow Zuccini, Capsicum, cucumber, zuccini green and yellow chopped tomatoes followed by pink Guava, grapefruit add the dressing and toss the ingredients.
Keep sprinkling the orange juice as you toss the salad through- so your salad maintains its freshness and retains the original colours. To serve decorate with lettuce leaves to encircle the bowl. Enjoy it freshly made.
