Recipe : “Magic” carrots mousse with only 2 ingredients ! Gluten-free, egg-free & dairy-free !
«MAGIC» CARROTS MOUSSE GLUTEN-FREE
Prep time: 10 min
Cook time: 15 min
Servings : 6
Ingredients:
0.7 to 0.8 lb of carrots (= about 7 carrots)
water of a can of chickpeas
pinch of baking soda
Salt, pepper (to your liking)
Instructions:
1) Peel, wash & slice the carrots. Cook them in a pan of salted boiling water, covered, for 15 min. Then, drain, rince under cold water & mix them with a mixer.
2) Beat the chickpeas water with a pinch of baking soda, using an electric whisk, for 3 min. We, then, get a stiff mousse (like whipped egg whites), MAGICAL !! 😉
3) Add about 1/3 of this mousse to the mashed carrots & mix it up gently, then, add the rest & mix it up gently again.
4) Put in the fridge & serve quickly or serve immediately 😉
This mousse is really magical!! With only 2 ingredients (and no egg, dairy or gluten!), with get a foamy, smooth & light mousse, like whipped egg whites!
It’s so easy & quick to do! So, next time you do some humus or something else with chickpeas, don’t forget to keep their water! 🙂
And don’t worry, we don’t feel the chickpeas taste once we add the carrots! 🙂
You can replace the baking soda by a pinch of salt.
This magical mousse is perfect as a first dish or as an appetizer served in verrines. You’ll surprise & impress everyone! And try to make them guess the ingredients 😉
