Interesting, never seen anything like it!
your video inspired me to attempt my first loaf. Do I see a 'Making Bread' mini-series in your near future?
You dont have carbon steel saute pan?
Yes, Emile Henry makes very nice cook/bakeware unless you are a klutz like me. I have two lovely dutch ovens that no longer have lids. Sadly, they have changed their molds since I bought them years ago and the new replacement lids don't fit. At any rate, if you have a bread stone or steel, you can get the same effect by putting a large metal mixing bowl over your loaf when you put it on the stone. Spritz the dough with some water first and remove the pot after the first 30 mins or so.
