ππΌ Do not place chocolate in the fridge to set, the humidity will ruin the tempering.
ππΌ Candy melts do not need tempering and can be placed in the fridge to set; however, I also use this method to melt them, it gives them a very shiny finish.
ππΌ Each time you add more chocolate chips, you will notice that they will take more time to fully melt. You’ll know when to stop adding when the last batch took some time to melt (i added about 4 times).
ππΌ When working with tempered chocolate, you need to work really fast!
