Youβll need
4 tbsp oil
1 tbsp butter
4 onions, medium
1 tbsp tomato paste
2 tomatoes, grated
Salt
100 ml hot water
4 eggs
Ground black pepper
Hereβs how
1- Add 4 tbsp oil and 1 tbsp butter to a nonstick medium skillet and heat gently.
2- Add 4 chopped onions and saute for a few minutes stirring frequently, until they go translucent.
3- Add in 1 tbsp tomato paste and 2 grated tomatoes, saute 2-3 minutes more.
4- Sprinkle salt over it.
5- Pour in 100 ml hot water and give it a stir.
6- Close the lid and simmer over a low heat for 5 minutes, until the onions are soft.
7- Make rooms for each egg and break them into these rooms. Stir them if you like.
8- As a final touch, sprinkle ground black pepper. You can sprinkle other herbs on it.
9- Close the lid and wait until the eggs are cooked through.
10- Remove from the heat and serve immediately with fresh bread.
