I’ve been making this burger a lot recently after veganizing @J. Kenji López-Alt’s version. Created during The Great Depression to make expensive burgers cheaper by adding onions to make up for using less meat, it lends itself perfectly to plant based burgers. If you make this – lightly oil the pan before adding your vegan ground beef. I’m using Impossible here, but Beyond should work too. For the onions, use the lowest setting on a mandolin to slice, just be careful with that thing!
