Lemon Pound Cake Recipe
INGREDIENTS:
1 ¼ cup (284 g) unsalted butter, softened at room temp
1 cup (200 g) white granulated sugar
4 large eggs
1 cup (280 g) low-fat Greek yogurt
2 tsp lemon extract
1 tsp vanilla extract
2 tbsp (30 ml) freshly squeezed lemon juice
2 cups (250 g) all-purpose flour
2 tsp (8 g) EACH: baking powder, baking soda
¼ tsp salt
Zest from 2 large lemons
For Lemon Glaze:
1 cup (120 g) confectioner’s sugar
2 to 4 tbsp (30 to 60 ml) lemon juice
