VEGAN SALAD WITH 40g OF PROTEIN?! || RECIPE
…but where do Vegans get their protein???
This video is a collab with my friend Lisa! She’s making higher-protein vegan recipe videos in order to help eliminate the stereotype that you can’t get protein or build muscle on a vegan diet….I LOVE this concept (and her) so I asked if I contribute π

SALAD
3 cups spinach
1 cup of roasted brussels sprouts
1/4 cup dry quinoa
1/2 cup dry split peas (lentils work as well)
1/4 cup chopped red bell pepper
1/4 cup frozen corn, cooked
—Cook all ingredients according to package instructions. Toss in a large bowl and enjoy!
DRESSING
1 1/2 tbsp Apple Cider Vinegar
2 tbsp Water
1 tsp Tahini
1/2 tsp coconut sugar
1/4 tsp dried rosemary
—Mix everything in a bowl, or blend for a more uniform consistency. This lightly dresses the salad, you may want to double if you’d like it to be heavier
*** DISCLAIMER: I am not saying you need to eat a high protein diet in order to survive/thrive. However, it is a fact that you need to be eating an adequate amount of protein in order to maintain or build muscle – which, as you can see from this video, you can definitely get from plants π
