Chinese Chicken Salad is my favorite salad ever! The peanut dressing is crazy good, and the salad is loaded up with tons of satisfying ingredients.

Chinese Chicken Salad Recipe
Ingredients:
For the dressing:
¼ cup grapeseed oil
2 tbsp rice vinegar
2 tbsp honey
2 tbsp peanut butter
1 tbsp dijon mustard
1 tsp sesame oil
¼ tsp Chinese five spice
¼ tsp salt
½ tsp grated ginger
1 tsp grated garlic
For the salad:
1 tbsp grapeseed oil
1 chicken breast, sliced through the middle (or two chicken cutlets)

Chinese five spice, for dusting the chicken
4 scallions, sliced (1/2 cup)
1 small head Napa cabbage (6 cups)
1 small head romaine (4 cups)
3 medium shredded carrots (1 cup)
½ cup chopped mint leaves
½ cup salted, roasted peanuts
1 can mandarin oranges, for garnish, optional
Directions:
To make the dressing, whisk together all ingredients until combined.
Heat a nonstick skillet over medium heat. Add the oil. Season both sides of the chicken with salt and Chinese five spice, then cook the chicken for about 4 minutes on each side until completely cooked through. Let the chicken cool, then shred with two forks or with your fingers.
Add the chicken to the dressing, as well as the scallions, napa cabbage, romaine, carrots, mint, and peanuts. Toss well. Then add the oranges, if desired. Serve immediately.
