Ingredients

1/2 cup whole-wheat flour
1/2 cup old-fashioned oats
2 tbsp honey
1/4 tsp baking powder
1/4 tsp cinnamon
2 tbsp vegetable oil
2 tbsp low-fat milk
One large egg
One large egg white
1/4 cup dark chocolate chips
1/4 cup chopped walnuts

Preparation

Preheat oven to 350ºF, and line muffin tin with cupcake wrappers.
Whisk dry ingredients in a large bowl.
In a separate bowl, add oil, milk, egg, and egg white, honey, and mix thoroughly. Add wet ingredients to dry ingredients, and mix well.
Fill muffin tins evenly, and bake for 20 to 25 minutes or until a toothpick is inserted in the center of the muffin and comes out clean.
Allow them to cool for 15 minutes, and serve.

2 Apple banana oat muffins recipe 120 calories (6 muffins) the calories are for one muffin.

Ingredients

1/2 cup oat flour
1/4 cup walnut flour, finely ground
1/4 tsp baking powder
1/2 tsp baking soda
1 tsp chia seeds
1 large egg
1 large egg white
1 oz yogurt
2 tbsp vegetable oil
1/4 tsp ground cinnamon
1/2 tsp vanilla extract
2 tbsp honey
1/2 cup or small apple, chopped
1 ripe bananas, mashed

Preparation

Preheat oven to 350ºF, and line muffin tin with cupcake wrappers.
In a large mixing bowl, combine oat flour and walnuts, baking powder, and chia seeds, cinnamon.
In a separate bowl, add the egg and egg white, yogurt, vegetable oil, honey, vanilla and mix thoroughly.
Add wet mixture to dry mixture, and slowly fold in apples and bananas.
Fill muffin tins evenly, and bake for 35-40 minutes or until a toothpick is inserted in the center of the muffin and comes out clean.
Allow them to cool for 15 minutes, and serve

3 Cinnamon raisin muffins recipe 120 calories (8 muffins) the calories are for one muffin.

Ingredients

1/2 cup oat flour
1/4 cup raisins
1/4 cup walnut chopped
1/4 cup almonds chopped
1 tbsp ground flaxseed
1/4 tsp cinnamon
1/4 tsp baking powder
1 large egg
1/2 cup low-fat milk
1 tbsp natural peanut butter
2 tbsp maple syrup

Preparation

Preheat oven to 350ºF, and line muffin tin with cupcake wrappers.
In a large mixing bowl, combine egg, milk, peanut butter, maple syrup and mix thoroughly.
In a separate bowl combine oat flour, almonds, walnut, raisins, ground flaxseed, baking powder, cinnamon.
Add wet mixture to dry mixture, and stir to combine.
Fill muffin tins evenly, and bake for 20-25 minutes or until a toothpick is inserted in the center of the muffin and comes out clean.
Allow them to cool for 15 minutes, and serve.

4 Strawberry muffins recipe 100 calories (8 muffins) the calories are for one muffin.

Ingredients

½ lemon zest
2 tbsp honey
1/2 cup Greek yogurt
2 tbsp vegetable oil
1 large egg
1/2 tsp vanilla extract
1/2 cup whole-wheat flour
1/4 tsp baking powder
1/2 cups fresh strawberries

Preparation

Preheat oven to 350ºF, and line muffin tin with cupcake wrappers.
In a large mixing bowl, combine egg, greek yogurt, vegetable oil, lemon zest, vanilla extract, honey and mix thoroughly.

In a separate bowl combine whole-wheat flour, baking powder.

Add wet mixture to dry mixture and add in strawberries, and stir to combine.
Fill muffin tins evenly, and bake for 25-35 minutes or until a toothpick is inserted in the center of the muffin and comes out clean.
Allow them to cool for 15 minutes, and serve.
