How To Make Madeleines at Home
The madeleine is a traditional small cake from Lorraine region in northeastern France. Madeleines are very small sponge cakes with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions. Here’s how to make it so easy.
Here are the ingredients:
3 large eggs (65g each)
3/4 cup sugar (150g)
2&ΒΌ cup all purpose flour (281g)
3 tsp baking powder (15g)
1 tsp lemon zest
3/4 cups of melted butter(170g) (unsalted and a little warm)
I am using a silicon mold in this video. This recipe yields 36-40 madeleines.
