Oxtail comes from the cow’s tail, then cut into thick pieces or chunks. In Jamaica, we often eat it curried, stewed, or braised.

Probable Oxtail is not a cut of beef you’d typically think to use, But if you skip this cut of the cow, you’re missing out.

Here are three flavor profiles you can use to season your Oxtail – they can be delicious recipes for soups, stews, and main courses. If you can’t find Oxtail in your area – substitute it for meaty veal or beef neck, short rib, shank, or other soup bones. As with any recipe, feel free to modify it.

Jamaican Green seasoning (pimento, garlic, onion, scallion, thyme, Ginger, scotch bonnet) here’s a modified version
All-purpose rub any of your choice
All-spice Mixed dried
Herbs: Majoram, thyme, rosemary, oregano
