Mango Lassi

¼ cup milk
½ cup yogurt
1 mango, peeled and diced
1 tbsp sugar OR honey
¼ tsp ground cardamom

Combine all ingredients in a blender.
Blend until smooth.
Enjoy!

Thai Mango Salad

1 mango, julienned
1 red bell pepper, julienned
2 carrots, peeled and julienned
2 green onions, finely chopped
1/3 cup peanuts, crushed
1 lime, juiced
1 tsp honey
½ tsp fresh ginger, grated
red pepper flakes to taste

Combine mango, red bell pepper, carrots, green onion and crushed peanuts in a large bowl.
In a small bowl, whisk lime juice, honey, ginger and red pepper flakes.
Pour dressing over salad and mix well.
Garnish with more crushed peanuts.
Enjoy!

Mango-Avocado Salsa

1 mango, diced
1 avocado, diced
½ small red onion, finely diced
½ jalapeno, finely diced
1 lime, juiced
fresh cilantro, finely chopped
salt and pepper to taste

Combine ingredients in a large bowl.
Mix and serve.
Enjoy!
