4-Ingredient Lotus Biscoff Cake Recipe
This lotus Biscoff cake is one of the easiest cakes I’ve ever made! All you need is 4 ingredients and 5 minutes of work. This cake is soft, moist and topped with delicious lotus Biscoff cookie butter spread. A perfect cake to make when you don’t have time.

Ingredients:
350g (oz) Lotus Biscoff cookies
1½ cups (360ml) Milk
2½ teaspoons Baking powder
115g (4oz) Lotus Biscoff cookies butter

Directions:
1. Preheat oven to 340F (170C). Line the bottom of a 7-inch (18cm) round cake pan with parchment paper and set aside.
2. In a food processor or a Ziploc bag, crush the cookies into fine crumbs.
3. Transfer to a large bowl, add baking powder, milk and mix until combined.
4. Pour into prepared pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
5. Release from the pan and allow to cool.
6. Place the cookie butter into a microwave safe bowl. Melt in the microwave for 20-30 seconds.
7. Pour melted cookie butter over the cake and allow to set. Sprinkle some crushed Biscoff cookies to decorate if desired.
