Potato Balls
3 potatoes
1 tbsp butter
1 cup mozzarella cheese, shredded
1 tsp salt
1 tsp ground black pepper
To coat;
Parsley, finely chopped
Carrot, grated
Sesame seeds
1. Place boiled potatoes, butter, shredded mozzarella cheese, salt and ground black pepper in a large mixing bowl.
2. Mash and shape into a ball.
3. Coat with finely chopped parsley, grated carrots and sesame seeds.
4. Enjoy!

Roasted Red Pepper Salad
5 red capia peppers
½ cup parsley, chopped
½ cup dill
Juice of half a lemon
2 tbsp olive oil
1 tsp salt
2 cloves of garlic
1. Halve the peppers and arrange on the baking sheet lined with parchment paper cut-side down.
2.Roast the red peppers for 15 minutes.( 200°C)
3.Peel roasted peppers and chop.
4.Mix together chopped peppers, finely chopped parsley, dill, lemon juice, olive oil, salt and garlic.
5.Enjoy!

Eggplant Salad
2 eggplants
5 tbsp plain yogurt
2 tbsp mayonnaise
1 clove of garlic
1 tsp salt
1. Peel the skin of the eggplants and roast in the preheated oven (200°C) until softened, about 30 minutes.
2.Cut the roasted eggplants into small cubes.
3.In a mixing bowl, mix together yogurt, mayonnaise, garlic and salt.
4.Add roasted eggplants.
4.Place in a serving dish and garnish with olive oil, ground red pepper and finely chopped parsley.

Purple Cabbage Appetizer
Half of purple cabbage
60 ml olive oil
3 tbsp plain yogurt
2 tbsp mayonnaise
2 cloves of garlic
1 tsp salt
1.Chop the cabbage.
2.Place in a non-stick pan, add olive oil and saute.
3.In a mixing bowl, mix together yogurt, mayonnaise, garlic and salt.
4.Add the sauteed cabbage and mix well.
5.Enjoy!

2 slices of toast bread
1 small bowl of walnuts
2 cloves of garlic
2 tbsp of pepper paste
4 tbsp tomato paste
1 tsp cumin
1 tsp ground black pepper
1 tsp salt
120 ml olive oil
1. Simply tear the bread into pieces, and pulse it in the food processor until it’s ground
2. Add half of the walnuts and pulse again.
3. Add garlic, pepper paste, tomato paste, cumin, ground black pepper and salt. Pulse again.
4.Add olive oil and rest of the walnuts and pulse a few times to incorporate.
5.Enjoy!
