How to make the most delicious, fresh, spicy and easy Asian Squid Salad. This recipe has the most amazing flavours and texture. Fresh squid or calamari is the perfect partner to this Asian Salad. It can also be served with Chicken, Beef, Duck, Tofu or left completely vegetarian.

Serves 2-4
Ingredients –
Salad –
1/2 – Long Red Chilli, Deseeded and Thinly Sliced
1/2 – Lime, For Serving
50g – Unsalted Peanuts, Roasted and Roughly Chopped
1 (300g) – Squid or Calamari, Scored and Thinly Sliced
1 – Carrot, Peeled and Julienned
1/2 (320g) Wombok (Chinese Cabbage) – Thinly Sliced
250g – Red Cabbage, Thinly Sliced
15g – Fresh Mint, Roughly Chopped
20g – Fresh Coriander (Cilantro), Roughly Chopped
Fried Shallots to Garnish (I use 1 Tbs per serving)
Nuoc Mam Dressing –
1/2 – Long Red Chilli, Seeds Included
1/2 – Lime
1 – Garlic Clove, Crushed
1 Stalk (20g) – Lemon Grass, Crushed
10g – Ginger, Sliced
3 – Kaffir Lime Leaves
75ml – Fish Sauce
50ml – White Vinegar or Rice Wine Vinegar
20ml – Water
70g – White Granulated Sugar
