This moist carrot cake loaf studded with walnuts & raisins with cream cheese frosting is downright one of my favourite loaf cake recipes that are easy to bake. It is packed with healthy ingredients like carrots, walnuts and raisins, and with the delicious tangy cream cheese frosting, it can be a gorgeous treat to welcome guests.
Ingredients
1 cup Carrots – grated
1 cup Choice of Nuts & Dry Fruits I prefer Walnuts & Raisins. An alternate would be Pecans, Hazelnuts, Almonds, Sultanas, Plums, Figs, Pineapple
1½ cups All-purpose Flour
½ cup Brown Sugar
3 Eggs
½ cup Refined Neutral Oil
¾ cup Milk
½ tsp Baking Powder & Baking Soda
1 tsp Vanilla Extract
½ cup Cream Cheese
¼ cup Butter
1 cup Icing Sugar
2 tbsp Lemon Juice
