Chicken Tenders and Honey Mustard Mayonnaise | Baked Vs Fried
Baked vs Fried Crispy Chicken Tenderloins, Tenders, Tendies or Fingers. These crispy pieces of chicken are so easy to make, taste fantastic and all of the ingredients are cheap. The fried version obviously has a crispier shell but that doesn’t mean the baked version isn’t still really crispy, it’s also healthier too. With the breadcrumb seasoning, each bite you take has an amazing flavour and the chicken is juicy and tender. The best part about this recipe is the honey mustard mayonnaise that is incredible, tastes so good and is really easy to make which makes it the perfect accompaniment to the crispy chicken. Ingredients –

Chicken & Egg Wash –

1 – Large Garlic Clove or 2 Small Cloves, Minced
1/2 – Lemon, Juiced
1 – Large Free Range Egg
1 Tbsp (20ml) – Olive Oil
750g (1.6lbs) – Chicken Tenderloins
Seasoning To Taste

Breadcrumb Mix –

110g (3.8oz) – Panko Breadcrumbs
90g (3.1oz) – Fine Breadcrumbs
1 tsp (2.5g) – Onion Powder
1 tsp (2.5g) – Garlic Powder
1 tsp (2.5g) – Smoked Paprika

Mayonnaise –

200ml (200g) – Olive Oil
1 – Large Free Range Egg
1/2 – Lemon, Juiced
1 tsp (10g) – Dijon Mustard
Sea Salt Flakes To Taste

Honey Mustard Mayo –

60g (2.1oz) – Runny Honey
60g (2.1oz) – Dijon Mustard
1/4 tsp (0.2g) – Cayenne Pepper (Optional)
