Here is a recipe for chicken verde with ragi millet salad:

Ingredients:

4 boneless, skinless chicken breasts
1 cup salsa verde
1 tablespoon olive oil
Salt and pepper, to taste
1/2 cup ragi millet
1/2 cup diced cucumber
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
Juice of 1 lime
2 tablespoons extra-virgin olive oil
Instructions:

Preheat the oven to 375°F (190°C).

Place the chicken breasts in a baking dish and pour the salsa verde over them, making sure they are coated evenly. Drizzle with olive oil and season with salt and pepper.

Bake the chicken for 25 to 30 minutes, or until cooked through and no longer pink in the center.

While the chicken is cooking, prepare the ragi millet salad. Cook the ragi millet according to the package instructions. Once cooked, remove from heat and let cool.

In a mixing bowl, combine the cooked ragi millet, diced cucumber, diced red onion, chopped cilantro, lime juice, and extra-virgin olive oil. Season with salt and pepper to taste.

Serve the chicken breasts hot with the ragi millet salad on the side. Enjoy!
